Keto is great until you realise you can’t eat regular muffins. How did we survive without a chocolate bite always within reach? By suffering.
Luckily we found the answer: mini muffins. They’re so small you can have a few guilt-free… or so we tell ourselves while eating the fifth one 🤭. This makes 20 bite-sized muffins.
Method
- Preheat the oven to 175 °C / 350 °F.
- Mix all the dry ingredients in a bowl.
- Add the eggs, oil or butter and vanilla. Mix until smooth.
- Grease the mini muffin tin well and fill each cup halfway.
- Bake for 16 minutes or until a toothpick comes out clean.
- Let cool a few minutes before unmoulding… or risk your tongue, your call.
psst… House tips
- They travel well: Lele takes them to school three at a time, because one muffin is never enough 🤣.
Perfect for sudden cravings, work, school or the sofa during a series marathon. We’re already planning the next batch! 😉
