Keto almond cookies

After several days of baking cakes, Lele wanted something different: cookies! And not just any cookies — ones she could cut out with her Super Mario cookie cutters (a Three Kings’ Day present she hadn’t been able to use yet) 🏰✨.

Method

  1. Preheat the oven to 175 °C / 350 °F and line a tray with baking paper.
  2. In a bowl, mix the dry ingredients (almond flour, salt and baking powder).
  3. In another bowl, beat the butter with the erythritol. Add the egg and vanilla.
  4. Stir the dry mix into the wet one until you get a smooth dough.
  5. If the dough is too runny, add the extra 15 g of flour.
  6. Chill the dough for 15–20 minutes so it firms up.
  7. Roll into small balls, place them on the tray and flatten slightly.
  8. Bake for 12–14 minutes or until the edges are golden.
  9. Let cool a few minutes on the tray before moving to a rack.

psst… House tips

  • The dough is a bit too soft for embossed cutters — the Mario cookies will have to wait for another recipe 😅.
  • Take them up a level with whipped cream sweetened with erythritol and cocoa. Out of this world! 🤩
